The above pic is what we want for all of our precious avocados to look like when we cut them open. They are such perfection…the good fat. If you’re not already treating yourself to this excellent nutrient packed fruit here’s a few quick points on why you should. Avocados are full of:
- Potassium – controls blood pressure
- Lutein – eye health
- Folate – crucial for cell repair during pregnancy
- Vitamin B – fight off disease and infection
- Vitamins C and E – cancer prevention

You know I had to get that info in there, but what I really came to talk about today is the best way to preserve these beauties longer. It is so HOT right now that you almost can’t eat avocados fast enough at the speed they ripen. So what can we do? Freeze them! Simply cut them in half and place them in a freezer bag or container. You don’t even have to remove the seed. If you’ve ever frozen your bananas it’s the same concept. Once you’re ready to use your avocado just place it in the fridge overnight to thaw and you’re good to go. It won’t have that same original perfect consistency, but it sure beats having to throw them away which is heartbreak. I promise they’ll still be good and definitely good for you.
